The Viral Potato Chip Charcuterie

I have a real weakness for potato chips…I really love them and when I first saw someone make Potato Chip Charcuterie on Instagram, I knew I had to try it! The video I watched used fancy Torres Iberian Ham Potato Chips (which I immediately ordered but they’re not here yet), pickles (not sure about that), Pecorino Romano cheese and prosciutto. Even though I wouldn’t have used the pickles, everything else sounded divine! The only thing missing was a chilled glass of Rosè!

Since my chips will not be here until Tuesday, I decided to go ahead and make this recipe with Cape Cod Chips and they did not disappoint! I added a trio of cheeses…Gruyere, Parmesan and Pecorino Romano - all freshly grated, Prosciutto and my favorite spice, Honey Aleppo Pepper. The only other thing that I might add next time, or at least serve on the side would be a few Castelvetrano olives.

One bag of chips will serve 4 people very generously and these chips go quickly because they’re delicious and best when they’re hot, although, they’re pretty dang good cold too! These would be great for a casual get together and perfect served at a cookout with hamburgers. Serve everything in a red and white paper boat…cleanup is minimal and it makes a cute presentation! I would call these chips addictive and I can’t wait until my gourmet Iberian Ham chips get here so I can try them in this recipe. My daughter also suggested a drizzle of Truffle Oil (yummy!!)..the options are endless! I hope you enjoy!
